Mini Turkey Meatloaf Muffins

Serves 6, two muffins each. Serve with mashed potatoes and a salad

 

Ingredients

1 1/2 lb Mixed Ground JD Farms Turkey

1/2 cup quick cooking oats

1/2 cup finely chopped onion

1 egg

3/4 cup ketchup

2 Tbsp Worcestershire sauce

2 cloves garlic, minced

1 tsp dry mustard

Salt & Pepper to taste

Directions

In a large bowl, combine turkey with oats and egg.

In a separate bowl, mix all remaining ingredients together. Add half the sauce mixture to the turkey and mix thoroughly.

Pack lightly into a greased 12-cup muffin tin. Spoon remaining sauce evenly over top of muffins.

Bake at 350F for 25-30 minutes, until centre of muffin is no longer pink or meat thermometer placed into center of loaf registers 165F.
